Date Almond Truffles
I make this dish every Ramadan as our special holiday treat. This is my adaptation of this recipe from Kitty Morse's North Africa: The Vegetarian Table:
1 1/2 cup toasted slivered almonds
1 cup pitied dates, chopped, I like madjool
1 tbls rose water, or to taste, I always add more
1/2 tsp ground cinnamon
1`/2 shredded coconut
Place half the dates and almonds in a food processor or blender and grind to a thick paste. Repeat with second batch. Place in a bowl with rose water and cinnamon and mix with your hands. Shape into small bite-size balls. Roll each ball in the coconut. You can place them in fancy candy wrappers and then into a decorative box and give as a delicious gift. I like the rose water with the dates as opposed to orange water because the coolness of the rose balances the heat of the dates.

Makes one serving
This smoothie is packed with essential fatty acids, vitamins C, B complex, zinc and other anti oxidants and stress busting nutrients. I say we drink this instead of sweets and tea after mosque functions. Takbir!
2/3 cup milk
1/3 cup coconut milk
1 tsp raw chocolate
1 banana1/3 cup papaya, mango, strawberries
1 tsp flax seeds
1 tblsp green powder
Stevia, xlitol or rapadura sugar. No more that 1 tbsp raradura
Place raw chocolate in a coffee grinder and grind into a powder. Add flax seeds, but do not grind for more than 20-30 seconds. In a blender add all other ingredients. Blend well then add the chocolate ad flax seed.
